Cheddar cheese is English, with recorded references since 1661
Cheddar Cheese originated in the town of Cheddar, Somerset in England.
Cheddar Cheese is now made in many Countries around the world.  Canada has many Cheddar Cheese producers.
Sweden, Austria, Ireland, Australia, New Zealand and the U S A (Wisconsin, South Dakota, New York, Idaho, Minnesota, and Oregon) produce significant quantities of cheddar.
As Cheddar ages, its texture, flavor and performance change depending on the length of aging and their origin. Aging is the process of holding cheeses in carefully controlled environments.
As cheddar slowly ages, it loses moisture and its texture becomes drier and more crumbly. Sharpness becomes noticeable at 12 months (old cheddar) and 18 months (extra old cheddar). The optimal aging period is 5-6 years; For most uses three-year-old cheese is fine and five-year-old cheddar can be saved for special occasions.
